  • Chicken leg quarters - I love these because they have a lot of meat. You can also use regular bone-in chicken thighs or legs too!
  • Ketchup - You can use any brand. Although most ketchup is gluten free, it is good always to read the labels.
  • Mustard - I like to use brown mustard because it adds more flavor. You can also use Dijon if you prefer.
  • Spices - Chili powder, paprika, garlic powder, salt and pepper. Be sure your spices are gluten-free and not processed on shared equipment if you are sensitive to gluten.

Any slow cooker will work well; I find the size is the most important because I like to cook a big meal so that there are leftovers to freeze. I use this 7-quart Crock Pot.

Step 1: In a small bowl, add the sauce ingredients and mix well.

Step 2: Add the chicken leg quarters and sliced onions to the slow cooker.

HINT: I created this slow cooker chicken quarters recipe to be a dump-and-go recipe because I wanted it to be the easiest possible. If you like a browned finish for your chicken, I would encourage you to brown it in a hot oiled skillet on each side for 4 minutes before adding it to the slow cooker.

Step 3: Smother the sauce over the chicken and add the water to the slow cooker. Cover the slow cooker and cook on high for 4 hours or low for 6 hours.

Ingredients

  • 1 ½ pounds chicken leg quarters
  • 1 cup ketchup
  • ¼ cup apple cider vinegar
  • 2 teaspoons brown mustard Dijon also tastes great
  • 1 ½ tablespoons ground paprika
  • ¼ cup brown sugar
  • 1 tablespoon avocado oil
  • 1 tablespoon chili powder
  • ½ cup onion sliced
  • 2 teaspoons minced garlic
  • ½ teaspoon cayenne
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ cup water

Instructions

  • Put the barbecue sauce ingredients into a bowl and mix well.

  • Pour the water into the bottom of the slow cooker. Add your chicken leg quarters to the slow cooker and then top with the sliced onions.

  • Pour the sauce on top of the chicken and onions.

  • Cover the slow cooker and cook on high for 4 hours or low for 6 hours.

    I made this and it was great. However, I am still confused by the chicken measurements for the recipe. Chicken quarters from my store amount to significantly more than 1 1/2 pounds between 4 of them. It’s more like 8-12 of them per 10 pound bag, which leaves me utterly guessing on how to ratio the sauce recipe. Any suggestion on how to calculate it properly? Thanks for a tasty recipe though!

      Hi Beth, WOW, I buy two chicken quarters and the two are 1 1/2 pounds. I am not sure how to standardize this if each store/butcher cuts them differently? I will think about what I can do about this. I am glad you loved the recipe!

    Hello- I’m planning on making this tonight but I have a question. The avocado o that’s in the recipe- does that go into the ingredients for the sauce or is that oil to be used if someone wanted to brown their chicken beforehand in a skillet? Also, if I don’t have avocado oil, would olive oil suffice? I do t plan on browning my chicken first but I’m asking in case it’s supposed to go into the BBQ sauce recipe. Thanks so much, Fara

      Hi Fara, that oil goes into the sauce. I don't brown the chicken beforehand. You can brown it if you like.

    I tried the recipe using store bought bbq sauce. Not sure what happened but my sauce, when done was liquidity. I like a thicker sauce. Perhaps it's the liquid from the chicken. The flavor was good.

      Hi Mark, it was the liquid from the chicken. The barbecue sauce recipe I include was seasoned for the extra liquid. I haven't made this recipe with store-bought bbq sauce, but if you use that, you would want to use more and maybe less water.
