They require 6 simple ingredients, minimal prepping, and almost zero attention when cooking. Learn how to make juicy, crispy-skin chicken leg quarters in a crockpot.   • Chicken leg quarters: I’m using raw and thawed whole chicken legs
  • Salt-free Herb Spice: this is one of my favorite all-purpose spices. In one container, you get things like lemon, black pepper, tarragon, and more. It’s available at the grocery store in the spice aisle.
  • Onion powder
  • Garlic powder
  • Smoked paprika: this tastes different from regular paprika and a game-changer in a range of dishes. If you don’t have, do yourself a favor and pick some up!
  • Sea salt

How To Make Chicken Leg Quarters In The Crockpot

  1. Add the chicken leg quarters to the bottom of the crockpot. Mix the spices and sprinkle the mixture over the chicken (use tongs to mix to coat).
  2. Cook on high for 3 hours. Remove the chicken from the crockpot and add it in a single layer to a broiler-safe baking sheet or dish.
  3. Top the chicken with all of the juices from the crockpot.
  4. Broil for 5-7 minutes on high to get crispy skin.

Recipe Tips & FAQs

  • This recipe uses whole legs, but you can substitute it with chicken thighs or drumsticks.
  • For best results, use a large crockpot: Mine is 8 quarts.
  • Mix the spices before applying them to the chicken to help in even spreading.
  • No need to add liquids to the meat as it steams in its own juices while it cooks.
  • After slow cooking the crockpot chicken leg quarters, broil them for a crispy chicken skin.
  • Add optional sauces: I eat these plain, but you can also eat these with your favorite sauce like hot sauce or barbecue sauce.
