Reviving old bell peppers and giving them back their texture is actually easy- it takes just a few steps. Start by filling up a bowl of water and dump a bunch of ice cubes into it.

Next, add your bell peppers into them and allow them to sit in there for around 15 minutes or so. Now remove them, place them on a paper towel and wipe them dry. That’s it.

Instant Pot Stuffed Pepper Soup

Instructions

  1. Press the Saute button on the Instant Pot and add butter and olive oil.
  2. Add the onion and saute until golden brown.
  3. Add the ground sirloin and cook until the meat is no longer pink.
  4. Add the minced garlic, mix well, and cook for one minute.
  5. Turn off the saute setting.
  6. Add a small amount of the chicken broth, and then stir while scraping the bottom of the pan to deglaze the pan and prevent burning.
  7. Add the remaining chicken broth and water, and stir again.
  8. Add the rest of the ingredients.Stir well.
  9. Place the lid on the Instant Pot and turn the pressure valve to sealing.
  10. Set for a Manual high-pressure time of 10 minutes.
  11. When the cooking time has finished, do a quick pressure release.
  12. When the pressure is released, stir the soup.
  13. Serve the soup with your favorite crusty bread.
